Weekend Jumpstart Series Part 1: Fried Rice, No Rice!

Dear friends, we are so excited to bring a new series to you, one that will be full of practical information, entertaining moments, and hopefully encouraging takeaways!

As we begin the series of vlog’s (video blogs) that will focus on recipes geared towards our diet sensitive families—we want you to know that these are simple, easy, recipes. Our goal is to put new tools in your hands so that in each phase of your journey you are able to take on the next step with confidence! We will introduce you to the amazing contributors to our vlog series.

Lisa Ackerman: Founder of TACA, Mother to Jeff, Superwoman, TACA families Head Cheerleader! If you know Lisa, then you know that these words describe her to the tee. If you do not know Lisa—you need to invest in getting to know her, her family’s story, and the amazing work that she has accomplished throughout her life. Her legacy will certainly be the lives and the families that have been changed because of her bravery and honesty! We couldn’t be more grateful for all Lisa does daily to make TACA happen and to ensure that resources, education, and HOPE spread around the country like a wildfire!

 

Amy Hull-Brown: Owner of Well Amy, a former Wall Street executive turned Mom on a Mission. Well Amy is now her calling. Her unexpected journey to better health began in 2007 when her twin sons were diagnosed with behavioral, digestive and neurological issues – the same issues too common for children today. Now Amy dedicates her life to taking what she has learned, discovered and found to be foundational in the recovery of her sons and helping other families walking that same road. Well Amy is a result of this passion and we are grateful that she has partnered with TACA to bring this series to life and help bring healthy, good food into your home, one meal at a time!

 

Shannon Penrod: Host of Autism Live, Shannon is the proud mother of a teenager who is recovering from Autism. Her son Jem was diagnosed at the age of two and a half after having lost virtually all of his language and social skills. Whether it was researching new diets, learning the legal ins and outs of special education law or finding funding for ABA therapy, Shannon became her son’s best advocate and an advocate for many other families. In 2009, Shannon began the host and producer of Everyday Autism Miracles, a weekly radio show that focuses solely on Autism and hope. Autism Live has become a huge resource for our TACA families and we are proud to be able to have them present this series of vlogs!

Fried Rice No Rice!

Ingredients
 
•    1 head of cauliflower, (about 2½ cups chopped in a food processor)
 
•    2 Tbs sesame oil
 
•    1 cup frozen peas and carrots, thawed
 
•    2-3 Tablespoons coconut amino sauce (soy sauce replacement)
 
•    1 egg & 2 egg whites, lightly beaten
 
Optional: Green onions
 
Instructions
 
1.    Rinse and chop the cauliflower into florets and put into a food processor. (NOTE: If you don’t have a food processor continue to chop the cauliflower into tiny pieces.) Pulse until the cauliflower until it is
 
small and resembles the size of long grain rice.
 
2.    Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add onion and peas
 
and carrots and fry until tender.
 
3.    Slide the onion, peas, and carrots to the side, and pour the beaten eggs onto the other side. Using a
 
spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
 
4.    Add the cauliflower to the veggie and egg mixture. Pour the soy sauce replacement on top. Stir and
 
fry the rice and veggie mixture until heated through and cauliflower is tender. Add chopped green onions if desired.
